An Elegant Mother's Day Breakfast

What to cook on Mother's Day? We wanted an elegant breakfast. We asked an expert. We went to Harrison House, a beautiful bed and breakfast in Lenox, Massachusetts. We asked Andrew, the owner, what to cook for mom. What would please her eye and her palate we wondered?

His answer: Make popovers, split them, and let them cradle scramble eggs with dill and smoked salmon. Serve with fruit and a slice of sweet bread.

Andrew promised us that if you make a bread the day before, the breakfast isn't that hard.

The popover batter is simple and you must NOT, NOT, NOT look in the oven while it's cooking. Then you'll whip together some scrambled eggs, clean a few strawberries, slice a little melon.

When the popovers come out of the oven, split one in half and stuff with scrambled eggs. Give her breakfast in bed, or set a beautiful table. Part of the tradition is to serve an elegant breakfast, one without cereal boxes sitting on the table.
