Old-Fashioned Butter Sponge Cake

From Shari's collection of old-fashioned recipes, this is over 110 years old

    • 2 1/4 cups sifted flour
    • 2 teaspoon baking powder
    • 1 teaspoon salt
    • 11 egg yolks
    • 2 cups sugar
    • 1 cup scalded milk
    • 1 teaspoon vanilla
    • 1/2 teaspoon lemon extract
    • 1/2 cup melted butter
 

Method

Preheat oven to 350°F.

Sift dry ingredients together. Beat egg yolks until thick and lemon colored; add sugar gradually, beating thoroughly after each addition. Add milk, vanilla and lemon extract; beat until well blended. Fold in sifted dry ingredients gradually, blending thoroughly. Add butter; mix well. Pour into ungreased 10 inch tube pan. Cut through batter with spatula to break large air pockets.

Bake in preheated 350°F oven for 50 to 60 minutes. Cool in inverted pan for about an hour.
