Old-Fashioned Family Lemon Butter

From Shari's collection of old-fashioned recipes,
this easy recipe is about 100 years old

6 eggs, beaten
1/2 cup butter
2 cups sugar
Grated rind and juice of 3 lemons

Method

Mix all ingredients in top of double boiler. Place over hot water; cook, stirring, until thick. Cool. May be spread on tarts or bread.
