Beef Noodle Soup - A Diabetic Recipe

A healthy recipe for anyone with diabetes

  • 6 ounces whole grain spaghetti
  • 1 tablespoon cornstarch
  • 2 teaspoons reduced-sodium soy sauce
  • 1 tablespoon canola oil
  • 8 ounces top-round beef steak, thinly sliced
  • 1 red bell pepper, cut into thin strips
  • 6 scallions, diagonally sliced
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1/8 teaspoon ground cinnamon
  • 4 cups reduced-sodium beef or mushroom broth
  • 1 tablespoon rice wine vinegar
 

Method

Prepare the pasta according to package directions and drain.  Stir together the cornstarch and soy sauce in a small bowl and set aside.

Coat a large saucepan with cooking spray.  Add the oil and heat over medium-high heat.  Cook the beef in batches, turning once, for 3 minutes, or until browned.  Remove to a bowl.

Recoat the pot with cooking spray.  Add the pepper, scallions, ginger, garlic, and cinnamon and cook, stirring, for 4 minutes.  Add the broth and vinegar and bring to a boil.  Stir in the soy sauce mixture and cook for 3 minutes, or until thickened.

Divide the beef, noodles, and broth mixture among 4 bowls.
