Thai String Beans with Fresh Ginger

This spicy hot vegetarian dish is made with all fresh ingredients.  A delightfully different recipe.  Fresh ginger is essential in Thai cooking

      • 1/2 pound fresh string beans
      • 2 tablespoons vegetable oil
      • 1 stalk fresh lemongrass, finely chopped
      • 1 tablespoon shredded common ginger
      • 1 to 5 red chile peppers, seeded and finely chopped
      • 1/2 cup coconut milk
      • 1/4 teaspoon salt
      • 3 cups chopped cabbage
 

Method

Cut string beans into 2-inch strips.  Heat oil in a wok with lemongrass, ginger and red chile peppers until oil starts to bubble.  Stir in coconut milk, string beans and salt; cook on high heat for 3 minutes.  Serve on a bed of chopped cabbage.

Serves: 3 - 4
