Tortellini Pasta Salad

Tortellini is a versatile pasta. It is comfortable, as in this recipe, being a salad with vegetables, and is classic with a meat sauce.

  • 4 ounces fresh tortellini
  • 1 cup fresh basil leaves
  • 1 clove garlic, minced
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons balsamic vinegar
  • 1/2 cup extra virgin olive oil
  • 1 small green pepper - seeded and julienne cut
  • 1 small sweet red pepper, seeded and julienned
  • 1/2 cup Italian pitted black olives

 

 

METHOD

In 3 quarts boiling water, cook tortellini until tender, about 4-6 minutes.

Drain and rinse with cold water.

In a food processor combine basil, garlic, parmesan cheese, balsamic vinegar and olive oil. Mix until pureed.

In a large bowl , combine tortellini, dressing, the two peppers and black olives. Toss gently to mix. Chill for 1 hour before serving.

Serves: 2 - 4 as side salad
