METHOD
In 3 quarts boiling water,
cook tortellini until tender, about 4-6 minutes.
Drain and rinse with
cold water.
In a food processor combine
basil, garlic, parmesan cheese, balsamic vinegar and olive oil. Mix until
pureed.
In a large bowl , combine
tortellini, dressing, the two peppers and black olives. Toss gently to
mix. Chill for 1 hour before serving.
Serves: 2 - 4 as side
