Cheddar Cheese Penne

Roger tells us that this works well on any short pasta.

  • 1 cup uncooked Penne Pasta
  • 1/4 cup chopped onion
  • 1/4 teaspoon minced garlic
  • 1 tablespoon butter
  • 4-1/2 teaspoons all purpose flour
  • 1 cup 2% milk
  • 1-1/2 cups shredded cheddar cheese - 6 ounce package
  • 2 strips bacon cooked then crumbled

 

 

METHOD

Preheat oven to 350°F . 

Cook pasta according to package directions. Meanwhile in small nonstick skillet coated with no stick cooking spray, saute onion and garlic until until tender.  Set aside.

In small saucepan, melt butter. Stir in flour until smooth, gradually adding milk.  Bring to boil, cook and stir for 1 - 2 minutes or until thickened. Stir in 1 cup of cheese, and cook just until melted.

Drain pasta.  Add pasta, bacon and onion mixture to the sauce stir to coat. Transfer to 3- cup baking dish coated with cooking spray, sprinkle remaining cheese on top and place into oven.

Bake in preheated 350°F oven for 15-20 minutes or until cheese melted.

Yields: 2 servings
