Mostaccioli Salad

Roger's daughter, Jennifer, loves this so much she asked him to make it for her wedding day.  He obliged and made it for 250 people.  He reports that there wee no leftovers.

  • 12 ounces dried Mostaccioli
  • 1 tablespoons salad oil
  • 1 medium cucumber - chopped
  • 1 medium green bell pepper-chopped
  • 1/2 red bell pepper -chopped
  • 1/2 cup chopped onion
  • 1/2 cup white vinegar
  • 1/2 cup sugar
  • 2 tablespoons crushed parsley
  • 1 teaspoon garlic salt
  • 1/4 teaspoon pepper

 

 

METHOD

Cook pasta according to package directions.  When done,drain, rinse with cold water, drain again then transfer to large bowl.  Toss with oil. 

Add cucumbers, peppers and onion in bowl with pasta.

In small bowl combine vinegar, sugar, parsley, garlic salt, black pepper.  Mix until sugar dissolves and pour over pasta, mixing well.  Cover and chill in refrigerator for 6-8 hours. 

Serves: 4
