Baked Macaroni and Cheese

Macaroni and cheese is the great comfort food. It has been popular in the United States since the Civil War.

  • 1 1/2 cups elbow macaroni
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 3/4 cup milk, warmed
  • 3/4 cup light cream, warmed
  • 1/4 teaspoon cayenne pepper
  • 2 1/2 cups grated sharp cheese
  • Salt to taste

 

 

METHOD

Preheat oven to 350°F. Butter a 1 quart casserole and set aside.

Boil macaroni according to package directions. Drain and put in casserole. Set aside.

Melt butter In a small sacuepan over medium heat. When butter bubbles, whisk in flour, stirring constantly. Cook, stirring, for one minute.

Gradually stir in warm milk and cream. Cook, stirring, until mixture thickens, about 2 to 3 minutes. Do not bring to a boil.

Remove from heat and add cayenne, and 2 cups cheese. Stir until cheese is melted. Pour over macaroni in casserole. Stir wel to combine. Garnish with remaining cheese, and dot with additional butter.

Bake in preheated 350 ° F oven for 25 to 30 minutes.

Serve:s 4 to 6
