Fusilli with Ground Chicken Sauce

"Health conditions in our family required us to eat more chicken. I began to cook with ground chicken and discovered this delicious dish. My husband, who had always been a "meat and potatoes" kind of guy, loves this dish and I am happy to let him eat it to his heart's content! From our house to yours!" M. Clark

  • 2 tablespoons olive oil
  • 2 cloves garlic - minced
  • 2 shallots - minced
  • 1 pound ground chicken
  • 1 jar pasta sauce
  • 1/4 cup chopped fresh basil
  • 1 can or jar water packed artichoke hearts - drained
  • 1 can pitted black olives - drained
  • 1/4 cup grated Parmesan cheese
  • Sprinkling of chili pepper flakes or pizza cut chilis - to taste
  • 4 cups of your favorite pasta - cooked (I like Fusilli or Bow Ties)

 

 

METHOD

In a large skillet, heat oil over medium heat. Stir in garlic and shallot, and cook until lightly browned, about 1 minute, stirring constantly. Do not burn or being careful not to burn garlic will become bitter.

Add ground chicken and brown thoroughly, stirring frequently. This takes about 7 - 8 minutes. Add pasta sauce, basil, artichoke hearts and black olives and continue cooking for about 10 minutes.

Pour over pasta, topped with grated parmesan cheese and a sprinkling of chili pepper flakes (if desired). Enjoy!
