Tofu Sandwich Italian Style

One of the glories of tofu is that it picks up many different tastes. Though Asian in origin, we can spice it any way we like. This carries flavors from Italy with it.

  • 2 cloves garlic, minced
  • 6 tablespoons olive oil
  • 1/2 teaspoon dried oregano
  • 2 tablespoons balsamic vinegar
  • Salt and freshly milled pepper to taste
  • 1 pound firm or extra-firm tofu
  • 6 kaiser rolls, sliced
  • 1 tablespoon capers
  • 2 medium tomatoes, sliced
  • 6 leaves lettuce
 

METHOD

Heat broiler, adjusting rack so it is as close to heat source as possible.

In a medium-size mixing bowl, combine garlic, olive oil, oregano, balsamic, salt and pepper.

Place tofu on its side. Cut in three large pieces. Stack the pieces together and cut from corner to corner on the diagonal to form triangles. Cut again across the opposite corners. Each slice will now have four triangles, or 12 in total. Pat dry. Set aside.

Put the tofu on a shallow baking tray. Brush with 1/2 the dressing. Put under the broiler, and cook for 2 minutes.

Using a spatula, turn the tofu, and brush with the remaining dressing. Cool for 2 minutes.

Put lettuce and tomato on one side of kaiser roll. Top with tofu and sprinkle capers over all. Close sandwich with second slice.

Serves: 4
