Monte Cristo Sandwich I

No, not named for the Count of Monte Cristo. This sandwich was originally served in 1910 in a Paris cafe. It is still a popular snack or casual meal throughout France and Switzerland in most bars and cafes.

  • 1/2 cup mayonnaise
  • 1/4 teaspoon. ground nutmeg
  • 1/8 teaspoon freshly ground pepper
  • 12 slices white bread, crusts removed
  • 6 slices Swiss cheese
  • 6 slices cooked ham
  • 6 slices cooked chicken
  • 2 eggs
  • 1/2 cup milk
 

METHOD

In a small bowl, combine mayonnaise, nutmeg and pepper; spread on one side of each bread slice. Layer cheese, ham and chicken on 6 bread slices; top with remaining bread, mayonnaise sides down.

Cut sandwiches diagonally into quarters. In small bowl, beat together eggs and milk; dip sandwich quarters into egg mixture. Cook on preheated greased griddle or in skillet, turning once, 4 to 5 minutes or until browned and heated through.
