Grilled Reuben Sandwich

The Reuben Sandwich is a grilled sandwich made with corned beef, Swiss cheese, sauerkraut, and Russian dressing on rye bread. One legend holds that t Reuben Kolakofsky, a wholesale grocer in Omaha, Nebraska created the Reuben Sandwich. Another claims that it came from Reuben's in New York City.

  • 1/3 cup mayonnaise
  • 1 tablespoon ketchup
  • 1 tablespoon horseradish
  • 1 tablespoon fresh parsley, chopped
  • 1/4 teaspoon pepper
  • 3/4 pound sliced corn beef
  • 1 pound sauerkraut
  • 8 slices rye bread
  • 4 (4 oz.) slices Swiss cheese
  • 2 tablespoons butter
 

METHOD

Combine mayonnaise, ketchup, horseradish, parsley and pepper. Spread this sauce on bread.

Layer the corned beef and sauerkraut on 4 slices of the bread, and top with the cheese. Cover with the remaining bread, and spread with I tablespoon butter. Melt the remaining 1 tablespoon butter in a large nonstick frying pan over medium heat.

Add sandwiches, unbuttered side down, and fry until golden, about 5 minutes each side. Turn and brown the other side.
