Bruschetta with Roasted Pepper & Basil

Bruschetta - how extraordinary is a piece of toast when turned into bruschetta.

  • 3 red bell peppers, roasted seeded and julienned
  • 1 yellow bell peppers, roasted seeded and julienned
  • 3 tablespoons balsamic vinegar
  • 1/2 cup olive oil
  • 1/4 cup lightly packed basil leaves
  • Salt and freshly ground pepper to taste
  • Italian or French bread in slices
  • Extra virgin olive oil to rub on bread
  • Garlic cloves, split in half to rub on bread
 

METHOD

Mix together bell peppers, vinegar, oil, salt and pepper. Stir to blend.

When ready to serve, gently stir in basil.

Rub each slice of bread with with oil. Grill each side to a light toasty brown. Rub garlic halves over one side of toasted bread.

Gently stir basil into pepper mixture. top each slice of bread with some of the mixture.

Serves: 6
