Brie Peach Sandwiches

Fruit always enlivens a dish. Peach combined with brie cheese is heaven on a French roll.

Peach mix

1/2 cup pach preserves
1 fresh peach, peeled and chopped
1 tablespoon minced green onions
1 teaspoon raspberry vinegar
1/8 teaspoon red pepper flakes

For Each Sandwich

Mayonnaise
Crusty French rolls
Butter lettuce
Brie cheese

METHOD

Combine all ingredients for peach mix and set aside. Makes enough for 8 sandwiches.

For each sandwich: Assemble sandwiches with the peach mixture just before serving.
