Italian Sausage Sandwich with Provolone Cheese

In an Italian home, there is always a little home-made tomato sauce handy, but you can use a store-bought can of sauce when you don't have your own.

  • 2 pounds Italian sausage, removed from casing
  • Provolone cheese 8-slices
  • Olive oil for frying
  • Small can pizza sauce or prepared tomato sauce
  • Garlic salt
  • 4 kaiser rolls or garlic bread cut into 4
 

METHOD

Divide sausage meat into 8 balls - each about the size of a meatball. Place between wax paper and flatten with a rolling pin.  Roll to about 1/4 to 1/2 inch thick.

Fry sausage in skillet with small amount of olive oil till done.  Drain on paper towels to rid of grease.  Lightly butter 4 pieces garlic bread.  Sprinkle with garlic salt and place under broiler.  Do not to burn.

Heat pizza sauce in small pan. 

On each of piece of garlic bread add 2 tablespoons pizza sauce, one slice of provolone  and a sausage patty.  Repeat a second time, ending with the cheese.  Place under broiler till cheese melts.  

Variation: add small can of mushrooms and/or hot pepper rings to the sauce when it is heating.

Serves: 4
