Cornish Hens with Blueberry Sauce

Any excuse to use blueberries is fine with us, and this is a recipe that will become a staple - easy, nutritious, delicious.

  • 1 Cornish hen, split in half
  • 1 garlic clove, peeled
  • Salt & freshly ground pepper

Blueberry Sauce

  • 1 teaspoon minced garlic
  • 1/3 cup red wine
  • 2 tablespoons balsamic vinegar
  • 1/2 cup wild blueberries (if you can get them)
  • 2 teaspoons honey

 

 

METHOD

Preheat oven to 400 degrees F. Rub hen halves well with whole garlic clove, salt and pepper. Bake for 60 minutes or until done.

Fifteen minutes before hen is done, start sauce.

In a small saucepan, "saute" the garlic in the red wine for 5 minutes over low heat. Add the vinegar and continue to simmer another 4 minutes.

Add blueberries and honey. Stir until honey dissolves and sauce just begins to return to a simmer. Drizzle sauce over hen halves before serving.
