cooking times have variables, depending on the moisture of the turkey,
whether you brined or not. A meat thermometer is the final determinant
of doneness. Never rely on the pop-up thermometer that comes
in a turkey. They aren't accurate. Turkey should reach an internal temperature
of 180 °F in the inner part of the thigh and 170° in the
breast. Stuffing should reach 165 ° . This is an important safety
factor.
