Kristine's Roast Chicken

Kristine carefully instructs to use real butter, not a substitute for this recipe. The use of garlic, butter and lemon is the winning combination.

  • 1 chicken, about 3 pounds
  • Salt and pepper to taste
  • 2 lemons
  • 2 tablespoons butter, cut in pieces
  • 1 tablespoon butter, melted
  • 1 - 2 garlic cloves, crushed
  • Italian seasoning (about 1 tablespoon)

 

 

METHOD

Preheat oven to 350 F.

Washed and dry chicken. Rub inside with salt and pepper.

Pierce lemons all the way through skins, 10 times each. Place in cavity of chicken. Lift breast skin gently place cold butter - the real thing - at intervals under skin. Put crushed garlic on each side under skin as well.

Brush bird with melted butter, sprinkle Italian seasoning all over generously.

Bake in a preheated 350 F oven for 1 hour 15 minutes. Let it rest for 20 minutes before cutting.

Serves: 4
