METHOD
Marinate chicken overnight
with the juice of one whole lemon juice and cumin. Sprinkle with salt.
In a frying pan, brown
chicken pieces in olive oil on all sides. Remove chicken and place in
a large pot.
In the remaining oil,
stir fry onions and bell pepper till caramelized. Add garlic and a teaspoon
of salt and stir fry about 1 extra minute. Add water and stir.
Add onions and peppers
to chicken pot along with the remaining ingredients. Cover and simmer
20 minutes.
Serve with white rice.
Serves 8.
