Cuban Chicken with Okra and Plantains

Mayra tells us that in Spanish this is called " Pollo Con Quimbombó y Platano." Whether in Spanish or English, this recipe for Cuban chicken tastes the same - delicious, sabroso.

  • 1 whole chicken, cut in 8 pieces
  • 1 whole lemon for seasoning
  • 1/4 teaspoon cumin (or more to taste)
  • Extra virgin olive oil for sautéing
  • 3 large chopped onions
  • 2 chopped green peppers
  • 8 minced garlic cloves
  • 1 teaspoon salt
  • 1 1/2 cups of water
  • 2 extremely ripe plantain, cut into 4 pieces eachs
  • 3 chopped ripe tomatoes
  • 8 chopped green pimento olives
  • 1/4 cup raisins
  • 3 teaspoons juice from jar in which olives are packed
  • 1 cup chopped okra
 

METHOD

Marinate chicken overnight with the juice of one whole lemon juice and cumin. Sprinkle with salt.

In a frying pan, brown chicken pieces in olive oil on all sides. Remove chicken and place in a large pot.

In the remaining oil, stir fry onions and bell pepper till caramelized. Add garlic and a teaspoon of salt and stir fry about 1 extra minute. Add water and stir.

Add onions and peppers to chicken pot along with the remaining ingredients. Cover and simmer 20 minutes.

Serve with white rice.

Serves 8.
