METHOD
Pound chicken with wooden mallet until abou t1/8-inch thick. Melt 3 tablespoons butter and blend in flour. Add milk, broth, and wine. Cook until bubbly; set aside.
Cook onion in remaining butter. Stir in crab, mushrooms, crumbs, parsley, and 1/2 teaspoon salt. Stir in 2 teaspoons sauce.
Top each chicken piece with 1/4 cup of the crab mixture. Fold sides in and roll up. Place seam down in a baking dish.
Pour sauce over them and bake (covered) at 350 degrees for 1 hour. Top with cheese and a little paprika.
Bake 2 more minutes.
