Carne Guisada

  • 3 pounds round steak, trimmed and cubed
  • 2 tablespoons vegetable oil
  • 1 tablespoon flour
  • 1/2 medium green pepper, chopped
  • 1/2 medium tomato, chopped
  • 2 large cloves garlic, minced
  • 1 (10 ounce) can tomatoes and green chiles with liquid
  • 1 (8 ounce) can tomato sauce
  • 1/4 cup water
  • 1- 1/2 teaspoons ground cumin
  • Salt and freshly milled pepper to taste
 

Method

Cook steak in oil in a heavy skillet over medium-high heat, turning once, until browned. Remove from pan and put in onion.  Cook until softened, about 10 min tues.

Sprinkle with flour and return to pan with all other ingredients. Bring to a boil over medium heat.  When boiling, immediately reduce heat and simmer, uncovered, 40 minutes or until meat is tender and sauce is thick.

Serve in flour tortillas or over hot cooked rice.
