Mexican Shrimp - Camarones Costa Brava

This is a wonderful and authentic contemporary Mexican dish...the apple, honey and the shrimp are an unusual combination, and they certainly work well.

  • 32 grande shrimp
  • Chihuahua cheese, grated  substitute manchego or other white cheese of choice
  • Bacon strips
  • Oil
  • Garlic (optional)

Sauce Ingredients

  • 5 large tart apples  (I use Granny Smith) peeled and sliced fairly thin
  • Butter
  • Honey
  • Dry white wine or apple juice  
 

METHOD

Peel  and devein shrimp and slice almost in half. Stuff with grated cheese and wrap with bacon. Saute in oil or butter until golden brown.

Make the sauce by sauteing the apple slices in butter and add honey and wine or juice and simmer until thickened. Add the shrimp and and cook until hot.  

May be served with rice or salad  

Serves: 8
