Honey-Garlic Pork Chops

You need to mince the garlic finely or you will get too strong a taste.

  • 12 boneless center-cut pork chops, 6-oz. each
  • 3/4 cup lemon juice
  • 3/4 cup honey
  • 6 tablespoons soy sauce
  • 3 tablespoons dry sherry
  • 6 cloves garlic, finely minced
 

Method

In a medium-sized bowl (lots of room for whisking!) whisk together all ingredients except for chops (they don't whisk too well).

When nicely mixed, pour over pork chops, cover tightly and chill in the refrigerator for a minimum of 4hours, as much as overnight. 

Remove chops  from marinade, but don't throw away that luscious marinade. Grill pork five inches from heat source for 12-15 minutes, turning once, to an internal temperature of  155-160°F. Baste occasionally with reserved marinade.
