Pork chops with Apple Stuffing

  • 1 cup croutons
  • 1/2 cup crisp cooking apple -- peeled, seeded, minced (Galas are great for holding their shape!)
  • 1/2 cup cheddar cheese -- finely grated
  • 2 tablespoons currants
  • 1/4 teaspoon salt or to taste
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons fresh orange juice, strained
  • 2 tablespoons unsalted butter, melted
  • 6 (2-inch thick) pork chops
  • Salt to taste
  • White pepper to taste
 

Method

Preheat oven to 350°F.

Mix together in a large bowl, the croutons, apples, cheese, currants, 1/4 teaspoon salt, and cinnamon.  Toss gently to fully combine.  Pour orange juice and butter over all and toss gently again to mix. 

While stuffing settles, cut a pocket into each of the pork chops. Season the pockets with a light sprinkle of salt and pepper. Spoon stuffing mixture into the pockets of the chops. Place into a lightly greased shallow baking pan. Bake in preheated 350° F oven for 60 minutes. Remove from oven and cover with foil.  Return to oven and bake another thirty minutes. 

Serves: 6
