Meatloaf Italian Style

You don't want fine bread crumbs for this.  If you can make your own with day-old bread ground in a food processor that is best. The Japanese breadcrumbs called Panko are also wonderful here.

  • 1 1/2 tablespoons extra-virgin olive oil
  • 1 small red pepper, seeded, finely chopped
  • 1 onion, finely chopped
  • 2 - 3 cloves garlic, minced
  • 1 pound ground beef
  • 1/2 pound ground pork
  • 2 eggs, lightly beaten
  • 1 cup fresh bread crumbs
  • 1 cup grated Parmesan
  • 1 tablespoon Worcestershire sauce
  • 1 1/2 tablespoons balsamic vinegar
  • 2 tablespoons fresh basil, finely chopped
  • 2 tablespoons fresh parsley , finely chopped
  • 1 teaspoon salt, or to taste
  • Freshly milled black pepper to taste
  • 1 cup prepared tomato sauce
 

METHOD

Preheat oven to 350° F.

Heat the olive oil in a medium fry pan. Put in peppers, onions and garlic, and cook over medium heat until soft.  This is to take a little zing out of them, not to cook them.  Remove with a slotted spoon and set aside in small bowl. 

In a larger bowl lightly break up the meat.  Add bread crumbs, cheese,Worcestershire, balsamic, basil, parsley, salt, pepper and beaten eggs.  Last, add reserved onion/pepper mixture which should be slightly cooled by now.

Mix all together with your hands, enjoying the feel of the ingredients - the secret Italian ingredient is pleasure.

Lightly shape meat to put in a loaf pan or to cook free-form on an oiled pan with a lip (pizza pans are good for this).  Spread the tomato sauce evenly over the top. 

Bake  in preheated 350° F oven for 50 to 60 minutes. When cooked, let the loaf settle for 5 - 10 minutes.
