Puerto Rican Sweet & Sour Meat Loaf

Is there a country in the world that does not create a meat loaf?  The brown sugar does the trick here.

  • 1-1/2 pounds ground beef
  • 1 medium onion, finely minced
  • 1 cup cracker crumbs
  • Salt and pepper to taste
  • 1 egg, lightly beaten
  • 1/2 cup tomato sauce
  • 1 cup water
  • 2 tablespoons vinegar
  • 2 tablespoons mustard
  • 2 tablespoons brown sugar
 

Method

Put ground beef in a medium size bowl.  Put in onion, cracker crumbs, salt and pepper, tomato sauce and beaten egg.  If using salted crakcers, be careful of the salt.  Using your hands, mix well.  Do not over work the meat.

Lightly shape meat into a loaf.  Put in a lightly greased baking dish that will hold the meat without packing it tight.  Leave a half to one inch area around the loaf.  This will allow you to catch the drippings when basting the meat.

Combine tomato sauce, water, vinegar, mustard and brown sugar.  Whip with a fork to blend in the sugar well.  Spread over the meat.

Bake in a preheated 350°F oven for 1 12 hours.  Baste frequently during that time.
