Frikadeller - Danish Pork Balls

The globe-trotting meatball, giving us more ideas for hearty dinners or cocktail parties.

  • 2 pounds lean ground pork
  • 1/2 cup flour
  • 1 egg
  • 1 small onion, grated
  • Salt and freshly milled black pepper to taste
  • 3/4 cup club soda
  • 2 tablespoons butter
 

Method

Working in a roomy mixing bowl, combine pork with flour, egg, onion, salt and pepper.  Using your hands, blend gently until combined

Stir in club soda, a little at a time.  With lightly moistened hands, shape into small balls.

Melt butter in roomy saute pan.  Brown meatballs on all sides, shaking to move them around, or turning with a spoon.  Cook over low heat until pork is cooked through .

Delicious on a buffet table for any party.

Yield: 30 - 36 frikadeller
