Mini Meat Loaves (a meat loaf recipe to make with kids)

"These mini loaves will make dinner seem like a party!" Rae Grant from Cooking Fun: 121 Simple Recipes to Make with Kids

  • 2 slices soft bread
  • 1/4 cup milk
  • 1 egg
  • 1 small yellow onion, finely chopped
  • 1 pound lean ground beef
  • 1 tablespoon ketchup
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
 

Method

Set the rack in the middle of the oven.  Preheat oven to 350 degrees.  Use vegetable oil to lightly grease a 6-cup muffin tin.  Use a paper napkin to spread the oil evenly inside each muffin cup.

Tear the bread slices into small pieces and place in a medium bowl.  Add the milk and let the bread soak until most of the milk is absorbed.

Peel an onion and grate into the bowl using the medium-size holes of a box grater.  (Be careful not to scrape your fingers as you do this.)  Discard the remaining onion when it gets too small to scrape.

Crack the egg into the bowl with the bread and onions.  Add the beef, ketchup, salt, and pepper.  Using clean hands or a large spoon, gently mix until well combined.

Divide the meat mixture among the 6 muffin cups.  Smooth the top of each.

Place muffin pan in oven and bake for 40 minutes.  Using oven mitts remove the pan from oven.  Let the meat loaves cool for a few minutes  Run a fork around the edge of each meat loaf, then lift it out of the pan onto a serving plate (serves 2 loaves per person.)
