Venison Burgers

With infinite variety, the hamburger can be made from any meat.  A great change for the summer barbecue or grill.

  • 1 pound ground venison
  • 1 1/2 teaspoons horseradish
  • 1 1/2 teaspoons Worcestershire sauce
  • 1 small onion, minced (1/4 cup)
  • 1/4 cup evaporated milk
  • 1 teaspoon salt
  • 2 teaspoons yellow mustard
  • 3 tablespoons ketchup
  • 2/3 cup soft bread crumbs
  • Rye buns or your preference
 

Method

Heat gas or charcoal grill to med. / high heat.
Mix all ingredients well; shape into 4 patties of equal size.

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high.  When the grill is ready, brush the grill rack with vegetable oil. Place patties on grill 3 to 5 inches from coals; cook 4 to 8 minutes each side, turning once only, or to desired degree of doneness (145°F for medium-rare, 160°F for medium or 170°F for well done). makes 4 servings (2 at my house!) work
