Method
Combine cheese, scallion, pepper and sour cream. Mix well.
Divide
meat into 8 equal portions, and press into thin patties of equal size.
Spread 1 heaping tablespoon of cheese mixture in the center of 4 of the meat
patties, leaving 1/2 inch clear around the edges.
Place the remaining
patties on top of each of the mixture covered patties.
Carefully press
around the edges to seal them.
Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high. When the grill is ready, brush the grill rack with vegetable oil. Grill burgers to reach desired state of doneness - 145°F for medium-rare, 160°F for medium or 170°F for well done.
