Combine beef, sausage, bread crumbs, tomato sauce, onion, Parmigiano and pepper. Dig in with your hands and mix to combine. Do not over mix or you will toughen the meat. Shape into four patties. Place each patty on bread slice; top with additional tomato sauce and bread slice.
Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high. When the grill is ready, brush the grill rack with vegetable oil. Place patties on grill and cook, uncovered, about 5 minutes on each side to your preference of doneness. Top with Provolone, and continue cooking just until cheese melts.
Place each patty on toasted bread. Top with as much extra tomato sauce as you like and cover with second piece of toast.
