Method
Remove chipotles from the adobe. Wipe thee sauce carefully from the chipotles and mince the peppers so they will distribute throughout the patties.
Put ground beef into a medium bowl and break up loosely. Add remaining ingredients and mix lightly. Using the hands is excellent for this step. Carefully form into patties of equal size.
Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high. When the grill is ready, brush the grill rack with vegetable oil. Place patties on grill 3 to 5 inches from coals; cook 4 to 8 minutes
each side, turning once only, or to desired degree of doneness (145°F for medium-rare, 160°F for medium or 170°F for well done).
Serve on a bun topped with tomato and onion, guacamole, if you have it.
