Combine ground beef, steak seasoning, chipotle pepper. Mix well, but do not overmix.
Shape into thin patties - six for the bottom and six for the top. Sandwich together one burger, one slice cheese, a second thin burger on top. Crimp edges together to form a seal. When done, chill in refrigerator for thirty minutes.
Place on grill over medium coals for 8-10 minutes each side, with lid on grill. This will give a little smoky flavor in the air. Serve on buns with favorite condiments. If you like spice, a jalapeno pepper split in half, seeds removed, is good on the bun.
