Cajun Style Cheeseburger

  • 1/2 pound ground beef
  • 1/2 pound ground pork
  • 1/2 to 1 small onion, minced (according to taste)
  • 2 tablespoons chopped green pepper
  • 1/2 - 3/4 teaspoon ground red pepper, (according to taste)
  • 1/2 teaspoon salt
  • Freshly milled black pepper to taste
  • 4 slices cheddar cheese
  • 4 hamburger buns, lightly toasted
  • 4 tomato slices

  • 1/4 cup scallion, chopped (white and green both)
 

Method

Combine beef, pork, onion, pepper and seasonings in a roomy bowl.  Using your hands, mix to combine.  Do not overmix which will toughen the meat. 

Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to medium-high.  When the grill is ready, brush the grill rack with vegetable oil. Place patties on grill and cook, uncovered, about 5 minutes on each side to your preference of doneness. Top with cheese, and continue cooking just until cheese melts.

Serve on hamburger buns, topped with a slice of tomato and sprinkled with the chopped scallion.
