Tex-Mex Cheddar Turkey  Burgers with Caramelized Onions

The onion is meltingly tender and takes on the flavor of the barbecue sauce. A great hamburger.

  • 1 1/4 pounds ground turkey
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 small red onion, chopped
  • 1/4 cup chopped fresh cilantro leaves
  • 1/4 cup minced canned chipotle chile peppers in adobo sauce
  • 1 cup grated cheddar cheese, for topping
  • Caramelized Onions (recipe below)
 

Method

In a large mixing bowl, gently combine all the ingredients except the cheese, using your hands.  Form into 4 patties, each 3/4 inch thick.

Lightly oil the grill or a skillet over medium-high heat and cook the burgers to the desired degree of doneness, at least medium, 4 to 6 minutes per side.

Serve it up wrapped like a burrito in warm flour tortillas

Top it off with caramelized onions and the cheese.

Caramelized Onions

  • 2 tablespoons olive oil
  • 2 large onions, very thinly sliced
  • 1/4 teaspoon salt
  • 1/4 teaspoon coarsely ground black pepper
  • 1/4 cup beef broth
  • 1/2 cup barbecue sauce
  • 2 tablespoons balsamic vinegar

    Heat the olive oil in a large skillet over medium-high heat.  Add the onions, salt, and pepper and cook, stirring often, until the onions are browned, 7 to 10 minutes.

Add the broth, barbecue sauce, and vinegar.  Reduce the heat to low and simmer until the sauce thickens, about 15 minutes.

Makes 4 burgers
