Grilled Flank Steak

 

  • 1 small onion, chopped
  • 1 large garlic clove, minced
  • 1/2 teaspoon chili powder
  • 1 tablespoon butter
  • 1/2 cup  tomato sauce
  • 2 tablespoons vinegar
  • 2 teaspoons honey
  • 1/4 teaspoon salt (or to taste)
  • 1/4 teaspoon pepper  (or to taste)
  • 1 1/2 pounds flank Steak, 3/4" thick
 

Method

Marinade:  Melt butter over low heat in a small saucepan.  Put in onion, garlic, and chili powder and cook over low heat until onion is soft.  Do not raise heat.

Stir in tomato sauce, vinegar, honey, salt, and pepper. Bring to a boil, stirring constantly. Boil 5 minutes or until   slightly thickened.

While sauce is cooking, trim fat from flank steak. Score steak diagonally in two directions to form diamonds.  Turn and repeat on other side. 

Brush with sauce. Grill steak on uncovered grill directly   over medium coals for 7 minutes. Turn and grill to desired doneness.  You will need 5-7 minutes on the second side for medium. Brush occasionally with the remaining  sauce.

To serve, thinly slice the flank steak across the grain. If you prefer to broil, put meat on unheated rack of the broiler in an oven preheat to broil for 7 minutes.  Broil 3" from heat for 6 minutes, then and broil 6-8 minutes on the other side for medium. Brush occasionally with sauce.
