Truck Stop Chili

"The title of this chili gives me reason to ponder. Does the title mean this Chili is wicked enough to stop a truck? Or, is it the kind of Chili one might find in a truck service center? I think the second explanation might be the one." Cliff

  • 4 pounds lean ground beef
  • 2 large onions, chopped
  • 1 15-ounce can of tomato sauce
  • 1 tablespoon garlic powder
  • 3 tablespoons chili powder
  • 2 teaspoons cumin
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 1 tablespoon Tabasco (or other hot sauce)
  • 4 cups water
  • 1 15 ounce can of black beans or red kidney beans, drained
 

METHOD

Brown ground beef in small batches. As each batch is finished, transfer to a 6 quart Dutch oven or stock pot.

Add onions, tomato sauce, garlic powder, chili powder, cumin, salt, sugar, Tabasco, and water.

Bring to a boil, reduce to hard simmer and cook 1 hour.

15 minutes before chili is finished, add drained beans to heat through.

Serves: 8-10
