Baked Rabbit

Meryl calls this baked rabbit dish 'hot cross bunny.' Please read her article to see why.

  • 2 (10 ounce) cans good quality mushroom soup
  • 1 cup good quality mayonnaise (preferably homemade!)
  • 1/2 cup sour cream
  • 2 teaspoon fresh lemon juice
  • 2 tablespoons melted butter
  • 1 teaspoon hot curry powder
  • 4 cups cooked rabbit, diced
  • Salt and cracked black pepper to taste
  • 1 cup toasted white breadcrumbs
  • 1 cup mature cheddar cheese

 

 

METHOD

Preheat oven to 350°F.

Mix soup, mayonnaise, sour cream, lemon juice and melted butter together. Stir to combine.

Add curry powder and mix well. Add rabbit. Season to taste. (Not too much salt as there is salt in the soup and you are using a mature cheddar.)

Sprinkle with breadcrumbs and then with cheese.

Bake in a preheated 350° F oven for 20 minutes or until the cheese has bubbled and turned golden.

Serve with a crisp green salad and a tall glass of wine, just for Mum!
