Fruit-topped Pork Loin Steaks

Nothing is quite as satisfying as pork cooked with fruit.  This is a nice variation on the usual pork with apples.

  • 4 (1" thick) Pork loin steaks, or chops
  • cracked black pepper
  • 1 tablespoon extra-virgin olive oil
  • 2 teaspoons curry powder
  • 1 teaspoon ginger (fresh-ground is best)
  • 1/4 teaspoon cinnamon
  • 1 1/2 cups mixed dried fruits (pineapple, apricot, mango, papaya, etc.)
  • 1/3 cup orange juice
  • 1 tablespoon cider vinegar
  • 2 tablespoons plus 1 teaspoon pineapple preserves
  • 4 servings hot cooked rice

 

 

METHOD

Pre-heat broiler to high heat.

Brush steaks lightly with oil, and sprinkle with pepper.

In a small bowl, blend together the curry, ginger, and cinnamon. Retain 1 1/2 teaspoons of this blend in a separate small dish.  Apply remaining blend evenly to both sides of the steaks.

Arrange steaks on an un-heated broiler pan rack.  Broil 4 inches from heat source for 10 minutes, turning once at mid-point, or until internal temp. reaches 160 degrees.

While steaks are broiling, in a small saucepan mix the fruit, juice, vinegar, and balance of the spice blend, and bring too the boil.

Stir in the pineapple preserves and remove from the heat, cover, and set aside for 4-5 minutes.

To serve, make a bed of rice on each platter, place one steak on each bed. Spoon sauce over steaks.  (String beans, pole beans or snap peas make for a great presentation with this dish.)
