One Dish Beef Casserole

This recipe could also be called a meal in a dish. It is rich with nutrients and simple to make. Joe encourages everyone to experiment with herbs or spices of our own choosing.  This is a "southern" version of "Johnny Marzetti".

  • 3 teaspoons olive oil
  • 1 1/2 pounds ground round
  • Salt and pepper to taste
  • 1 clove garlic, minced
  • 1 large onion, chopped
  • 1 large green bell pepper, chopped
  • 1 20 oz. can tomatoes, crushed & drained
  • 2 teaspoons Heinz 57 Sauce
  • 1 teaspoon Worcestershire sauce
  • 1 can shoepeg corn, drained (white corn)
  • 2 small cans mushrooms (& juice)
  • 8 ounces egg noodles, cooked (use 3/4th of pkg.)
  • 1 small can chopped black olives
  • 1 pound sharp cheddar cheese, grated
 

Method

METHOD

Brown meat in oil, season with salt and pepper. Add garlic, onion, and green pepper, cook for 15 minutes.

Add tomatoes, Heinz 57 sauce, Worcestershire sauce, corn, , mushrooms, noodles, olives, and half the cheese. Mix thoroughly.

Place in 9 x 13 baking dish and place in refrigerator to marinate overnight.

Preheat oven to 350° F.

Bring to room temperature, then bake for approximately 1 hour in preheated 350° F oven. Five minutes before serving place remainder of cheese on top of casserole & allow to melt.

Serves: 6 - 8
