Granma Urzi's Fabulous Meatballs

We rushed to try this recipe, never imagining that there was any such thing as 'sweet' crumbs. Delicious!

  • 3 pounds ground beef OR 1 1/2 pound ground pork & 1 1/2 pound ground beef
  • 1 1/2 cup finely crushed sweet bread crumbs**
  • 2 large eggs
  • 2 cloves garlic, finely chopped
  • 1/2 cup parmesan cheese
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon dried basil leaves
  • Dash salt/ pepper

 

 

METHOD

Place all ingredients in a large mixing bowl. Mix well and shape into balls. Place balls in a hot pan with a dash of olive oil. Cook balls until they are equally brown. Do not put balls in the oven because doing so will make them rubbery.

** Grandma used sweet crumbs. She said this would never be done in her Sicily, but she preferred sweet crumbs- for example, shortcake- because it gives the meatballs a pleasant, sweet taste. "Italian Bread Crumbs," like those sold in the markets may be substituted and taste just fine.

Serves: 6 - 8
