Maple-sorghum Ham

"My mom used to adorn her ham with Pineapple slices and Maraschino Cherries." Cliff Lowe

  • 10 to 12 pound cooked ham
  • 3/4 cup yellow prepared mustard
  • 1/2 cup sorghum molasses
  • 1/2 cup maple syrup
  • 1/4 teaspoon black pepper
  • Water
  • Cornstarch to thicken (optional)

 

 

METHOD

Preheat oven to 375° F.

Place ham in a covered baking pan along with 3/4 cup water and bake in preheated 350°F oven for 40 minutes.

Combine mustard, molasses, sorghum and pepper, set aside.

Remove from oven. Drain liquid from pan and set aside.

Using a heat-proof or metal spatula, or a brush, spread syrup-molasses mixture over ham.

Reduce oven temp to 350°F. Pour 1/4 cup water in with ham (do NOT pour over the ham) and cover. Return ham to oven and bake for 50 minutes.

Place ham on a platter to rest for 10 minutes before slicing. Meanwhile, combine liquid from pan with liquid already reserved. Thicken with a little flour or cornstarch, if desired, or serve as is to accompany the ham. Season to taste.

Serves: 10 to 15
