Ma Clayton's Eloff's Kya Special

"Kya" is the African word for 'house' so 'Eloff's Kya' would mean 'the house at Eloff's'.Excellent for kids who have recently left home!

  • 2 tablespoons butter
  • 1 large onion, chopped
  • 1 green pepper, chopped
  • 2 cloves garlic, smashed and chopped
  • 3/4 pound lean ground beef
  • 2 tablespoons tomato paste
  • 1/2 cup warm water
  • Salt and ground black pepper to taste
  • 4 eggs

 

 

METHOD

In a nonstick frying pan that has a tight fitting lid, melt butter and sauté onion until transparent. Add green pepper and garlic, and sauté for approximately 2-3 minutes.

Add the beef, and stir until nicely browned. Add tomato paste and warm water, and simmer for 3-4 minutes. Season.

Remove from heat. Make an indentation in beef mixture and break an egg into it. Repeat 4 times.

Put lid on pan and return to heat. Allow steam to poach the eggs. Serve on warm buttered toast.
