METHOD
In a nonstick frying
pan that has a tight fitting lid, melt butter and sauté onion until
transparent. Add green pepper and garlic, and sauté for approximately
2-3 minutes.
Add the beef, and stir
until nicely browned. Add tomato paste and warm water, and simmer for
3-4 minutes. Season.
Remove from heat. Make
an indentation in beef mixture
and break an egg into it. Repeat 4 times.
Put lid on pan and return
to heat. Allow steam to poach the eggs. Serve on warm buttered toast.
