Olde Time Irish Mutton Stew

Cliff calls this old-fashioned because it uses mutton. You can use lamb, but reduce cooking time by 1/2 hour and be sure to check for tenderness.

  • 2 pounds mutton
  • 6 medium potatoes, peeled and cubed
  • 6 medium carrots, peeled, cut into strips
  • 6 small whole onions
  • 1 small yellow turnip, peeled and cubed
  • 3 sprigs parsley
  • 2 teaspoonfuls salt
  • 1/4 teaspoonful pepper
  • 2 teaspoonfuls sugar
  • 3 teaspoons dark caramel coloring or liquid bouquet garni
  • Flour to thicken

 

 

METHOD

In a large pan or soup pot place the meat and cover with water. Measure the water so you know how many cups you needed.

Add all remaining ingredients, except flour. Bring to a boil, reduce to a gentle simmer and cover to cook for two hours. Stir now and then to prevent sticking.

Mix together 1 tablespoon flour to 1 tablespoon water for every cup of water you used. Stir to make sure there are no lumps. (If you used 6 cups of water, you would mix 6 tablespoons flour with 6 tablespoons water).

Add this mixture to the stew and stir gently until it comes to a boil; then, cook slowly for about 10 minutes.

Serves: 6 to 8

Note: may be cooked in the oven. You will then add the flour-water mixture as above, mix well, and cook for another half hour to 45 minutes until thickened.
