Skewered Hawaiian Beef

This is a variation on grilled beef that brings an island taste with it. You can marinate in a plastic bag if it is sealable.

  • 2/3 cup catsup
  • 1/4 cup vinegar
  • 2 teaspoons brown sugar
  • 3 tablespoons lemon juice
  • 4 teaspoons grated onion
  • 1 teaspoon mustard (yellow prepared)
  • 1 tablespoon Worcestershire sauce
  • 3 tablespoons dry sherry
  • 1/4 cup orange juice
  • 3/4 teaspoon liquid smoke
  • Pinch of pepper
  • Pinch of Hungarian paprika

  • 2 pounds sirloin, cubed
  • 1 (20 oz.) can chunk pineapple
  • 1 medium red bell pepper, cut in 1-inch pieces
  • 2 medium onions, cut in 1-inch pieces

 

 

METHOD

Mix first 12 ingredients in saucepan. Bring to boil, then remove from heat and let cool completely.

Place meat cubes in a covered, shallow dish. Pour sauce over meat, turn to coat, cover and refrigerate.

Marinate for 24 hours, turning every 3 hours.

Place meat on skewers alternating with pineapple chunks, bell pepper and onion. Cook to desired doneness on barbecue grill or under oven broiler.

Serves: 6
