Greek Beef Stew

When I was 16 years old, I worked in a Greek owned restaurant to help pay my school tuition. I have included this recipe here so you can better understand how a Greek stew can be morphed into chili.

  • 3 tablespoons olive oil
  • 1 1/2 pounds lean stewing beef, in 1 inch cubes
  • 1 (6-ounce) can of tomato paste
  • 3 tablespoons red wine vinegar
  • 2 cups water
  • 1/4 teaspoon ground cinnamon
  • 2 medium onions, chopped
  • 2 cloves garlic, crushed (or 1 1/2 teaspoons garlic powder)
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground cloves
  • 2 teaspoons salt

 

 

METHOD

Heat oil in large stewpot. When oil is hot, but not smoking, add meat.

Brown meat on all sides.

Add tomato paste, vinegar, water, cinnamon, onion, garlic, pepper, cloves and salt. Bring to a boil. When boiling, reduce heat to a simmer and cook for two hours, covered, stirring occasionally.

Serves 4 - 6
