Pseudo Chile Colorado

"I call this "Pseudo" Colorado because both my parents, Mexican- never came across Newman's Dressing or Soy Sauce while growing up in Mexico. My sister gave me the Soy Sauce idea, and I came across the Dressing once by mistake. These are both very important, as they add flavor." Rose

  • 2 (each) dried California and Poblano chiles
  • 2-3 cloves garlic (whole)
  • 1 (8 ounce) can of whole tomatoes (with juice) -or- 2 grilled, skinned whole tomatoes
  • 1 tablespoons soy sauce
  • 1/2 tablespoons Newman's Own Italian Dressing
  • Dash salt
  • Dash pepper
  • 2 pounds beef steak, thinly sliced
  • Olive oil

 

 

METHOD

Place chilies and garlic in boiling water. When they are soft, remove chiles, but keep a small amount of the water. Blend chiles, garlic, tomatoes, soy sauce, dressing, salt and pepper in electric mixer. Mix ingredients until the consistency is a thick sauce. Add chili water if sauce is too thick.

Brown meat in oil. (If desired, cook with 1-2 extra cloves of garlic.) When meat is brown, pour sauce over it. Cook mixture over low heat. Allow to cook covered for 1/2 hour to 45 minutes. Serve with Spanish rice, or refried pinto beans.
