Cliff's Barbecue Chicken in a Bag

Cooking chicken, or any meat, in a bag has a sensual element. We love opening the bag to discover the tender meat and veggies on the inside. A medium bag is perfect, but you can cut down a larger one. Alternately, try a manufacturer's oven bag. This is a great barbecue recipe.

  • 2 3-4 pound chickens
  • 2 large paper bags
  • 1/4 cup lard or oil
  • barbecue sauce click for note
  • 8 new potatoes (optional)
  • 2 onions, left whole (optional)
  • 4 ears corn (optional)

 

 

METHOD

Preheat oven to 375 °F.

Thoroughly rub paper bags, inside and out, with lard or oil. Place a chicken in each bag, and, being careful not to spill, pour half the BBQ sauce in with each chicken. Be careful to drizzle sauces over chicken as you pour. Fold bags tightly and staple shut.

Place chickens side by side on a rack in a lidded roasting pan and cover. Bake one and one-half hours.

Remove cover and bake 10 minutes more.

If using potatoes, onion or corn, check to see they will fit in the bag with chicken. If so, drop in when you add sauce.

Note: To open bags, slit with a long bladed knife to avoid any hot steam. Discard bags.

Remove chicken and vegetables to a platter. Pour juices over all, or put in a bowl and serve on the side.

Serves 4.
