Guacamole Roll-ups

Not your usual way to serve guacamole.

  • 2 ripe Hass avocados
  • 1/2 cup tomato salsa
  • Juice of 1 lime
  • Salt and freshly ground black pepper
  • 4 large flour tortillas, warmed
  • 1 cup finely shredded romaine lettuce
 

Method

Halve and pit the avocados.  Scoop out the flesh with a spoon and place it in a bowl.  Add the salsa and lime juice and mash together to blend.  Season with salt and pepper to taste.

Place the tortillas on a flat work surface and spread about 1/4 cup of the guacamole mixture across each tortilla.  Sprinkle with the shredded romaine.  Roll up the tortillas, cut into 1-inch slices, and stand on end.  Serve at once.

Serves: 4

QUICKER FIX;  Instead of making your own guacamole, use ready-made guacamole found in the refrigerated produce section of your supermarket.
